About Fresh Cafe

Dr. Kelly Paulsen is the creator and chef of Fresh Cafe. Kelly and her husband Carl founded the cafe in May of 2018 with the intention of providing Mundelein and the surrounding community with, healthy plant based food. Kelly's background in holistic health and Chiropractic is the foundation of her food philosophy. Her patients always got the "veggie talk". 

Tasting is believing.  Just come in and experience 100% Plant Based cuisine. All eating styles are welcome at Fresh Cafe. You aren't required to be fully vegan to love our food!

Our entire menu is Gluten-Free (Celiac Safe), Dairy-Free, Egg-Free, Soy-Free, Canola-Free, Peanut-Free but FLAVORFUL!

We're easy to find, there's plenty of parking in the back and the atmosphere will make you want to stay!

Our Farmers

In an effort to maintain the highest quality standard in fresh, clean eating, Fresh Cafe locally sources it's food from area farms. These include YoYo's Microgreens, Living Hope Farm, Cashmore Farms, Chatty Goat Farm, and River Valley Ranch.

Fresh Cafe has a vibe of small cafe but the ambiance is very spacious. Menu is very clear and all the ingredients are explained well. The staff was friendly and helpful.  You can tell the owner really loves what she does!



If you are following a Vegan diet, it's so exciting to walk into a restaurant where you can have ANYTHING (and everything) on the menu!  Such a rare treat. Happy to see the place was filled with customers. The food is extremely fresh and very delicious. I'll be a regular for sure!  



Great food, great vibe, great atmosphere. They have a delicious array of organic juices and smoothies, as well as soups, salads, sandwiches and treats. Everything is gluten-free, dairy-free, egg-free, soy-free, canola-free, peanut-free, 100% plant based.
